Sunday around the kitchen table

Welcome to the kitchen table, foodie friends!

I wanted to share a special edition of “Sunday around the kitchen table” with you.  Yesterday I had the chance to demonstrate a recipe on stage at the Haymarket Health and Fitness Expo, and I wanted to share the recipe with those who couldn’t make it out there to watch.

It’s not rocket science, and it’s been done before, but here’s my spin on “dessert pizza”.  I used my homemade rolled sugar cookie as a base/crust. The cookie is four inches in diameter and is a good size for an individual serving. You can easily use your own favorite sugar cookie recipe or pick up a tube of sugar cookie dough from the refrigerated section of the grocery store. My recipe yields twelve (four- inch in diameter) round cookies.

  • Sugar cookies (already baked)
  • Favorite fresh fruits (blueberries, strawberries (sliced), raspberries, etc.)
  • *Cream Cheese dessert topping (see note)
  • Other favorite toppings of your choice (coconut, white chocolate chips, chopped mint, peanut butter chips, are a few tasty examples)
  • Nutella, peanut butter or melted chocolate for drizzling (optional)

Take your sugar cookie and spread with a generous layer of cream cheese dessert topping. Add your favorite fresh fruits and other toppings to taste. Drizzle with Nutella, peanut butter or melted chocolate if desired.

*Make your very own “cream cheese dessert pizza topping” by mixing 8 ounces softened cream cheese, ¼ cup (1/2 of a  stick) of butter, 1 cup powdered sugar, 2 tablespoons half and half (or milk) and one teaspoon vanilla extract. Blend until smooth. This makes enough to cover approximately twelve (4 inches in diameter) cookies.  Or use to frost one dozen of your favorite cupcakes.

This is a great way to spend time around YOUR kitchen table, with the kids or with friends as a fun “build your own dessert” bar after dinner or at a party.   Enjoy time together and make your own individual dessert pizzas today!

Now log off, hang up and hang out!

Make it a great first week of June my friends.
